Taco Soup

Later this year my daughter is getting married.  Even though I cooked all the time when she was at home, she did not take much interest in cooking.  Now that she is getting married, I get the occasional text or phone call for recipes she loved when she was growing up.  Crock pot recipes are especially easy for her.

This taco soup recipe is the easiest recipe possible.  One of my best girlfriends gave me this recipe several years ago.  Everything is dumped in the crock pot, stirred and cooked on low.  All the ingredients are cooked so it only has to cook for 30 minutes.  You can keep it on warm for hours until ready to serve.  When it is done, top with your favorite taco bar ingredients.

Taco Soup

1 lb. ground beef, browned in a skillet

2 cans black beans

1 can pinto beans

1 can whole kernel corn

1 can diced tomatoes with mild green chiles

2 pkgs. of ranch dressing

1 pkg. taco seasoning


grated cheddar cheese

sour cream

chopped red onion

chopped cilantro

20160423_084949Add 2 cups of water and stir.  Set the crock pot on low.  Cook for 30 minutes and serve.

20160423_210239We like to top the soup with sour cream, grated cheedar cheese, chopped onion and chopped cilantro.

At the age of 21, I married my husband, AC and moved from Texas to Florida. I was a long way from home and missed my family. So I began cooking the recipes my Mom had cooked.
